Ingredients:
- 500 grams of fresh spinach leaves
- 250 grams of paneer (cut into small cubes)
- 2-3 tablespoons of oil or ghee

- 1-2 green chilies (finely chopped)
- 1 tablespoon of ginger-garlic paste
- 2-3 medium-sized tomatoes (finely chopped)
- 1 tablespoon of coriander powder
- 1/2 teaspoon of cumin powder
- 1/4 teaspoon of turmeric powder
- 1/2 teaspoon of garam masala powder
- 1/2 teaspoon of red chili powder (optional)
- Salt to taste

Instructions:
- Start by cleaning the spinach leaves thoroughly and boiling them in a large pot of water for about 3-4 minutes. Drain the water and rinse the spinach leaves with cold water. Blend the spinach leaves in a blender or food processor until you have a smooth puree.
- In a large pan or kadhai, heat 2-3 tablespoons of oil or ghee over medium heat. Add the finely chopped onions and green chilies and sauté for a few minutes until the onions turn translucent.
- Add the ginger-garlic paste and sauté for another minute until the raw smell goes away.
- Add the finely chopped tomatoes and cook until they become soft and mushy.
- Add the coriander powder, cumin powder, turmeric powder, garam masala powder, and red chili powder (if using) and mix well. Cook for 2-3 minutes until the spices are well combined with the onions and tomatoes.
- Add the spinach puree to the pan and mix well with the spices. Add water as needed to adjust the consistency of the gravy. Bring the mixture to a boil and let it simmer for 10-15 minutes on low heat until the spinach is cooked and the gravy thickens.
- Add the paneer cubes to the pan and mix gently. Cover the pan and let it simmer for another 2-3 minutes until the paneer is heated through.
- Turn off the heat and let the palak paneer sit for a few minutes before serving.
Your palak paneer is now ready to serve. You can garnish it with a dollop of fresh cream or a sprinkle of garam masala powder. Serve hot with naan bread or rice.
